When Ben and I decided to start a homestead, we were primarily motivated by living a healthy lifestyle. Although health has always been at the core of our homesteading journey, I rarely talk about our diets on the blog. I’ve always been a bit cautious about sharing the details of our diets in this space. A “one size fits all” diet doesn’t exist – what works for one person might not be a good fit for someone else. And that’s okay! (side note- these own bowl paleo chocolate chip cookies are allergen friendly and perfect for almost any diet!)

Although I previously identified as vegan, I moved away from a purely plant-based diet and no longer subscribe to food labels. Ben and I are constantly tweaking our diets, but we use the paleo diet as a (very flexible) framework. In general. our family maintains a gluten free, whole-foods diet with minimal ingredients. With the exception of a few items, we make everything from scratch. I’ve been slowly compiling a list of gluten free recipes over the last few months, and I’m so exciting to start sharing the recipes on the blog! Which leads me to these one bowl paleo chocolate chip cookies….

One bowl paleo chocolate chip cookies

I have a somewhat unhealthy obsession with chocolate, and I’m not ashamed to admit it. I’m literally incapable of ending any day without chocolate. Often times, Ben and I will be getting ready for bed while I’m simultaneously carrying a small bowl of chocolate chips throughout the house. I’m pretty sure my husband thinks I’m crazy, but he knew what he was getting himself into when he married me, right?

Anyway, these paleo chocolate chip cookies are insanely delicious. You know you have a winner when you make a dozen cookies … and you have about 6 left the next morning. Finley loves snacking on these cookies, and seeing as they’re filled with clean ingredients, I don’t mind one bit. Even though the ingredients are healthy, these cookies definitely don’t taste healthy. They’re ooey, gooey, and oh so delicious.

These one bowl paleo chocolate chips are also so simple to bake. Nine ingredients, one bowl, and less than 10 minutes prep?! Doesn’t get easier than that, friends. This recipe is 100% gluten free, grain-free, dairy-free, and egg-free. Zero refined sugars in the dough (with the exception of the chocolate chips) makes this recipe a healthier dessert option. Our whole family loves these cookies … except Beckham. These paleo chocolate chip cookies are sweetened with honey harvested from our farm, which is a no-no for kids under the age of one year. I’ll have to whip up a batch for Beckham once he’s old enough to eat honey, because I’m sure he’ll love them just as much as we do!

Recipe notes

If you haven’t worked with palm shortening before, then this is the perfect recipe to start. I originally used coconut oil instead of palm shortening in this recipe, but the consistency was a bit off. Palm shortening immediately transformed the consistency of these one bowl paleo chocolate chip cookies into light, fluffy, and delicious.

Finley and I tend to eat (way too much) of the dough when we bake these cookies, so I prefer to use a flax egg in this recipe. If you don’t like working with flax eggs, then you can probably sub the flax egg for a real egg. I also love swapping the almond butter for peanut butter when baking these cookies. If you’re following a paleo diet, just be aware that peanuts are not paleo. If you’re vegan and do not consume honey, then you can probably sub the honey for brown rice syrup seeing as it has a similar consistency.

Although this recipe is super simple, these cookies burn very quickly. Bake time varies depending on your oven, but I prefer a 10 minute bake time. One perk of using a flax egg is that you can slightly under bake these cookies. The finished product is more gooey and delicious in my opinion.

One Bowl Paleo Chocolate Chip Cookies

Ingredients

  • 2 cups almond flour
  • 1 tbsp flax
  • 2 tbsp water
  • 1/4 cup palm shortening
  • 1/4 cup almond butter
  • 1/3 cup honey
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup chocolate chips (we like Enjoy Life brand)

Instructions

  • Preheat oven to 350 degrees and line a large baking sheet with parchment paper.
  • In a small bowl, mix flax and water until combined. Set aside to thicken.
  • In a large bowl, add palm shortening and almond butter. With an electric mixer, beat palm shortening and almond butter until well combined.
  • Add honey, vanilla, and flax egg to the mixture. Beat until combined.
  • Add baking powder, salt, and almond flour to the mixture. Beat until well combined and a dough forms.
  • Add chocolate chips to the mixture. Beat until chocolate chips are evenly mixed throughout dough.
  • Scoop ~2tbsp of dough and form into balls. Place on parchment paper lined baking sheet about 2 inches apart.
  • Bake for 10-11 minutes. These cookies burn very quickly, so keep a close eye on them. I usually bake for 10 minutes, but baking time will depend on your specific oven.
  • Allow to cool on baking sheet for 5-10 minutes before transferring to a cooling rack. Enjoy!

Notes

The following substitutions will probably work, but I have not tested them:
*If vegan, try subbing brown rice syrup for honey
**If you don't like flax eggs, try subbing 1 medium-large egg (but do not under bake at all)
***These chocolate chip cookies are absolutely delicious with peanut butter instead of almond butter, but be aware that peanuts are not paleo.
****We recommend Enjoy Life brand chocolate chips
